Raspberry-Pecan Truffles with Peanut Butter, Maple and Oats
Hey there,
This week I am coming to you with one of those non-recipe recipes. Are these cookies? Get out of here, no! Internet mommy-bloggers would definitely call these “energy bites,” but that name makes me squeamish. Aren’t all foods just “energy bites” at the end of the day anyways?
I like to think of these tasty treats as a non-recipe recipe because you’re basically just throwing together a bunch of pantry ingredients you have on hand, and tailoring it to your desired level of chewiness. It’s also flexible since you can add as many nuts, seeds, chocolate, crunchy cereal, or coconut flakes as you’d like, and they’re easy from start to finish because they only require mixing and shaping.
They don’t require use of an oven or the stovetop, and can be thrown together the moment you get a sweet craving and realize there are no snacks in the house. If you follow along, you’ll end up with the most chewy, irresistible, cookie dough adjacent snack filled with nutritious ingredients and no refined sugar, unless you decide to coat them in melted chocolate (which I encourage you to do).

Ingredients
½ cup pecans, finely ground
1 cup oat flour
½ tsp cinnamon
1 pinch of salt
½ cup peanut butter
¼ cup maple syrup
½ cup frozen or fresh raspberries
3 oz chocolate, melted
Flaky sea salt
Instructions:
In a mixing bowl, combine the ground pecans, oat flour, cinnamon, salt, peanut butter and maple syrup. Mix with a wooden spoon until well combined. Add the frozen or fresh raspberries and stir until incorporated.
Using a tablespoon, scoop the mixture and roll between the palms of your hands to form individual balls. Place on a parchment lined plate and continue rolling and forming the balls until you’ve used all of the oat mixture. Place the raspberry-pecan truffles in the freezer and chill for at least 30 minutes or up to an hour.
While they are hardening, put the chocolate in a small bowl and microwave in 30 second increments until the chocolate is melted. Remove the truffles from the freezer and dip into the melted chocolate. Place on a plate and sprinkle with flaky sea salt if desired. Continue coating the truffles in melted chocolate. Allow the chocolate to harden and serve immediately.
